Saori graduated from the Robert Schumann Dusseldorf University of Music in Germany with a National Performer Certificate. At that time, she studied under the renowned pianist Robert Szidon.
She received a special prize at the 3rd Concorso MusicArte organized by the Italian Society of Japan.
She won a prize at the american protege internet international competition 2012 and performed at Carnegie Hall in 2012. She won the Avenir Prize at the 13th Osaka International Music Competition. She won the Grand Prize at the 21st IBLA GRAND PRIZE (Italy) and the Ravel Special Prize.
Saori Performed in the Pause Series organized by the Chopin Society of Japan at Kawai Tokyo.
She has also devoted herself to performing contemporary music, and at the 4th Evmelia International Music Festival (Greece), she has performed Messiaen's "End of the World Quartet" and other contemporary music programs. Nimrod Borenstein, a close friend, wrote piano Etude Op 66-4 for her. Mr. Borenstein is a composer supported by Vladimir Ashkenazy, and a CD conducted by Ashkenazy has been released.

She performed at the Alba Music Festival (Italy) and Beppu Argerich Music. With the cooperation of Kawai Piano Co., Ltd. she has launched a project to perform only Ravel's piano works since 2021 and is currently organizing a series of concerts. Saori has a youtube channel where she performs works by Messiaen, Henri Dutilleux, and other rare composers.

Completed graduate school at Musashino Academia Musicae. Entered the German National University of Music in Detmold. Studied under Professor Arnulf von Arnim and graduated at the top.

Since 2015, he has appeared in the Pitina public recording concert and provided the sound source. Passed the audition for the performers of the Pause series sponsored by the Japan Chopin Association, and held a solo recital at the Kawai Omotesando Pause Hall in Tokyo in 2016 (Chopin Association regular meeting). In 2017, co-starred with Izumiko Aoyagi on piano duet (Kawai Fukuoka). Performed at Kawai Hiroshima with a piano recital sponsored by Kawai. Invited to the jury of the Thai International Chopin Piano Competition held in Bangkok in 2017. Held concerts and master classes in Bangkok and gained popularity. In 2019, a premium lesson sponsored by Shimamura Music will be held and gained popularity.

In 2018, starting with a concert at Minami Azabu Center Hall (Tokyo), Mr. Giuseppe Nova, an international fruitist and judge of the Biwako International Flute Competition, sponsored by Munetsugu Hall (Nagoya), Steinway & Sons Kobe, and Oita Holt Hall. Co-starred with and appeared in many concerts such as the Kansai Beethoven Association regular meeting.​ He is also focused on playing contemporary music, and in September 2018, his friend Nimrod Borenstein gave the world premiere of the arpeggio etude work 66-4, which he wrote for Saori Toshi. The works of active composers who are currently living are actively taken up at concerts and have been well received. Borenstein is a composer supported by Vladimir Ashkenazy, and a CD directed by Ashkenazy is on sale.

Invited to perform at the 4th Evmelia International Music Festival (Greece) and Alba Music Festival (Italy). Performed at Beppu Argerich Music Festival Newcomer Concert and other international music festivals. In addition to co-starring as a soloist with an orchestra and concerto, he has performed extensively in Japan and overseas, including solo, chamber music, and accompaniment. The first album "Jeux d'eau" is now on sale from Koubelex. Also, in March 2019, the new album "Carnival, Suite Bergamasque, Burgmüller 25's practice song" was released. He has also appeared on FM Osaka's "Kurakore" and is expected to play an active role in many fields. From 2019 to 2020, conductor Tomomi Nishimoto will hold a total of three Ravel series at the manager YOSHU Hall (Osaka). Appeared in a talk show by conductor Tomomi Nishimoto and actress Yoshiko Sakuma. From 2020, he will be an artist of Illuminato Phil, whose artistic director is Tomomi Nishimoto.
